WHOLE BEEF INFORMATION

Here all beef is dry aged for a minimum of 14 days, longer is available by request and for additional fee.  

Price is based on the hot carcass weight referred to as hang weight.  Beef hang weight we see come through is an average of 800lbs.  No two cows are the same and weights vary.  We have received beef as low as 500lbs and up to 1,200lbs. We won’t know your hang weight until your beef is harvested and we bring it back to our shop to start the aging process.  

Example of cost:  You select the Whole Beef Grill Master Special and your beef comes in at 800lbs hang weight, your total cost is $4,400. 

Finished take home weight is not the same as the hang weight, rather about 60% of hang weight (loss of bone, trim, excess fat and moisture).  This is often confusing, here is a good link to help bring more clarity: https://extension.psu.edu/understanding-beef-carcass-yields-and-losses-during-processing

  2. Customer is responsible for picking up their meat.  
  3. Delivery of wholesale animals possible upon request only, additional charges will apply. 
  4. Any animal not picked up within 30 days from notice of ready for pick up becomes property of The Corner Butcher Shop.
